We are loving coconut lately. It can be turned into so many different properties milk, oil, water, yoghurt and flour therefore can be used in a multitude of recipes. The health benefits are many one of them being that it can help boost energy therefore making an ideal and oh so yummy ingredient for breakfast. Here are our 3 main breakfast recipes that will get you excited for those dreaded mornings.
Creamy Coconut Porridge.
2/3 cup of water
1/3 cup of porridge oats
2/3 cup of coconut milk
a handful of crushed almonds
This is such a rich and comforting breakfast. Add the oats to the water,coconut milk and bananas to a pan and bring to boil, once boiled let it simmer for about 10 minutes. Roast the crushed almonds in a frying pan (no need to add any oil). Then add to the porridge once cooked. Finally transfer to a bowl and add your toppings.
Frozen Banana Breakfast Smoothy
2 sliced Bannanas and frozen over night
1/2 Cup of Oats
1 Handfull of Blueberries
1 cup of Coconut Milk
1/2 cup of semi skimmed Milk
This is soo easy yummy and filling, just slice and freeze the bananas overnight, ready to blend with the rest of the ingredients the following morning. Simples.
Coconut Yoghurt with Blueberries & Flaxseed.

This is my baby girls favourite. Simply add all the ingredients to a bowl and enjoy.
